Vegan Chocolate Cake

Ingredients

  • 135 gr vegan butter like margarine (soft)
  • 80 gr brown sugar
  • 1 ripe banana
  • Pinch of salt
  • 100 gr flour
  • 70 gr ground nuts
  • 1 tbs corn starch
  • 10 gr baking soda
  • 1 tbs chocolate powder
  • 400 gr zucchini (grate finely)
  • 85 gr melteed dark chocolate (melt slowly on low heat)
  • 70 gr dark chocolate chopped

Preparation

  1. Pre heat oven at 180°C
  2. Whisk the margarine and the brown sugar for 2-4
    minutes
  3. Add the banana bits and salt and give it another
    good mix
  4. Add flour, baking soda, ground nuts, corn starch
    and chocolate powder mix carefully
  5. Add the grated zucchini and give it a mix
  6. Add the melted chocolate mix it all
  7. Add the chopped chocolate and give it a last good
    mix
  8. Fill it in a backing tin (cake mould)
  9. Bake the cake at 180°C for 40-50 minutes
  10. Let it cool down before taking it out of the tin/
    mould
