Vegan Chocolate Cake
Ingredients
- 135 gr vegan butter like margarine (soft)
- 80 gr brown sugar
- 1 ripe banana
- Pinch of salt
- 100 gr flour
- 70 gr ground nuts
- 1 tbs corn starch
- 10 gr baking soda
- 1 tbs chocolate powder
- 400 gr zucchini (grate finely)
- 85 gr melteed dark chocolate (melt slowly on low heat)
- 70 gr dark chocolate chopped
Preparation
- Pre heat oven at 180°C
- Whisk the margarine and the brown sugar for 2-4
minutes
- Add the banana bits and salt and give it another
good mix
- Add flour, baking soda, ground nuts, corn starch
and chocolate powder mix carefully
- Add the grated zucchini and give it a mix
- Add the melted chocolate mix it all
- Add the chopped chocolate and give it a last good
mix
- Fill it in a backing tin (cake mould)
- Bake the cake at 180°C for 40-50 minutes
- Let it cool down before taking it out of the tin/
mould
