Jo’s Sweet Potato Salad

Salad: toss the below ingredients in a bowl

  • 2 handfuls Rocket, watercress, baby spinach and lettuce leaves
  • 1/2 cucumber, peeled and diced
  • 1/2 onion, finely diced
  • 10 baby tomatoes, halved
  • 1/2 edamame beans
  • 1/2 lemon, squeezed
  • Drizzle extra virgin olive oil
  • 1 cup lentils (canned)

Preparation for potatoes:

  • 4 sweet potatoes, cut into discs of 1/2 inch width
  • Ground cinnamon
  • Ground All spice
  • Extra virgin olive oil

Oven 200C/400F

Drizzle the oil on a baking tin and brush both sides of the sweet potato. Sprinkle ground cinnamon and all spice on both sides.

Bakefor 20 minutes or until soft.

Then chop and add to salad.

*The lentils and edamame are plant based protein. The sweet potatoes, complex carbohydrate with cancer fighting antioxidants.
