I know it’s Winter in South Africa, but I would like to share this delicious salad that I created, as it always goes down well with all the family! It is packed with flavour and goodness, perfect for a lunch on its own or a side dish and you can refrigerate the rest for the next day – win, win!
Lettuce leaves of choice (maybe ½ a bag)
1 diced red onion
1 large diced tomato
1 cup of lentils (I use the
organic can – drain & rinse)
½ cucumber, peeled & chopped
Handful of pumpkin seeds
Freshly chopped mint
Dressing
½ lemon
Drizzle extra virgin olive oil
Himalayan salt (to your taste)
2 tbsp nutritional yeast (optional)
This recipe is so easy, and you can amend as you wish. I usually break the lettuce (green leaves only) into small pieces, as I want all the ingredients to mix well. The key is to keep mixing the salad well after you add each ingredient. I add and taste, then add and taste. Get that dressing exactly how you like it! I am naughty and love the salt! I tend to drizzle the oil lightly and have more lemon with plenty of mint. Don’t be afraid to experiment! And enjoy!
