Durban Lamb Curry

Ingredients:

  • 500g Lamb
  • 2 Heaped tbls Spice Fusion Curry Paste
  • 3 Tabls oil
  • 1 medium chopped onion
  • Sprig of curry leaves
  • 4 Cloves
  • 1 cinnamon stick
  • 2 potatoes, cut into quarters
  • 2 liquidised tomatoes
  • Coriander to garnish
  • Salt to taste

Method:

  1. Marinate lamb with Curry Paste.
  2. Heat oil, add cloves, cinnamon stick and onions. Fry until onions turn golden brown.
  3. Add lamb and braise for 15 minutes.
  4. Add boiling water and potatoes. The water needs to be added a little at a time until the lamb is cooked tender
  5. Add in tomatoes and mix, simmer for 10 minutes or until tomatoes are cooked through.
  6. Garnish with coriander and serve with rice or roti.
