Durban Lamb Curry
Ingredients:
- 500g Lamb
- 2 Heaped tbls Spice Fusion Curry Paste
- 3 Tabls oil
- 1 medium chopped onion
- Sprig of curry leaves
- 4 Cloves
- 1 cinnamon stick
- 2 potatoes, cut into quarters
- 2 liquidised tomatoes
- Coriander to garnish
- Salt to taste
Method:
- Marinate lamb with Curry Paste.
- Heat oil, add cloves, cinnamon stick and onions. Fry until onions turn golden brown.
- Add lamb and braise for 15 minutes.
- Add boiling water and potatoes. The water needs to be added a little at a time until the lamb is cooked tender
- Add in tomatoes and mix, simmer for 10 minutes or until tomatoes are cooked through.
- Garnish with coriander and serve with rice or roti.
